2010/211: Hard-boiled

Just out of curiosity, how do you hard boil your eggs?
Greg thought he found the perfect “recipe” that said to put the eggs in a saucepan, cover with one inch of cold of water, cover and bring to a boil over medium heat, when water comes to a boil, remove from heat and let stand for 15-17 minutes. Drain hot water, cover with cold water and ice.
Only thing is, that they were difficult to peel, because the egg shells would stick to the eggs.
MY way of making hard-boiled eggs is to put the eggs in a pot of water, bring to boil over high heat, and let boil for 10 minutes. They always come out perfect… like these!

    I only make them at Easter and my main goal is for them not to crack so Greg’s method is what I do 🙂 They do look yummy though!

    I don’t eat hard boiled eggs, but these are perfect. Mine always come out overcooked (with that unattractive gray ring) when I make them for Easter or, on the rare occasion, for Matt. I will have to try YOUR method for my next attempt.

    • I normally don’t eat them either, unless Greg makes deviled eggs. These were for a pasta salad i was making, and they get cut up really small, so that’s OK.

  5. and then don’t you take them out of the boiling water and dip into cold water? Or is that what makes them crack…I dunno…I’ve eaten ostrich eggs before. They are more filling than chicken eggs.

    • Yes! Of course I drain the hot water and rinse in cold (I don’t bother with ice).
      Ostrich eggs are “slightly” bigger than chicken eggs, and I would imagine that they are more filling.

    To be clear it’s not “my recipe”. I found it on the web when I couldn’t remember how long to cook eggs for Easter. Go ahead and swag it and see how many ways you find on “How to cook a hardboiled egg?”. I found this and have tried it for 2 years and have always been disappointed. Maybe the ‘large’ eggs I buy are too small for the time or something.

  8. I’ve always used Martha Stewart’s method (place eggs in pot, cover with 1 inch of cold water, add a splash of white vinegar, bring to boil uncovered, turn off heat, cover, let cook for 15 minutes, drain and place in cold water, peel).

    This method cooks them perfectly and only recently, we’ve had the very same issues with removing the shells. Can’t figure out why. Maybe it’s because the ‘new eggs’ have more protein/less fat in them?? No idea. Will give your method a try!

    This is funny! My kids would never eat hard boiled eggs until right before we moved. My Mom got Dane to eat them. I don’t have a tried and true method. My Mom always used the egg pricker that you linked to. I think hers always turned out perfectly.
